It’s Recipe Week!
Welcome back to the blog and to the official first day of fall! I’m looking forward to chai tea, pumpkin-flavored everything, and figuring out how to use the 54 apples my friends and I will inevitably regret picking.
I think it’s about time for a couple healthy recipes to keep in the back pocket. When you’ve got meals and snacks covered, you can focus on important things…like how to use up the 54 apples you’ve picked. Take a look!
First up is a hearty meal-prep recipe that I’ve been making every week for the last month. It is filling, nutritious, and easy!
Nourishing Chickpea Bowl
Preheat oven to 400°F
Line 2 trays with parchment paper
Mix the chickpea ingredients and toss to coat. Do the same with the sweet potatoes, and add each to a lined tray. Place both trays in the oven and bake for 35 minutes until sweet potatoes are tender.
Add arugula to a bowl with lemon juice and toss.
To assemble, create a base layer of hummus, then add in quinoa, arugula, sweet potatoes, chickpeas, red onion, avocado, and sprinkle with pomegranate and sesame seeds. Enjoy!
-2 cups arugula
-1/2 lemon, juiced
-2 cups cooked quinoa
-1/4 red onion, thinly sliced
-1/2 cup pomegranate seeds
-hummus (homemade or store bought)
-1 avocado, sliced
-sesame seeds
For the chickpeas:
-2 cans chickpeas, drained & rinsed
-Drizzle olive oil
-1 tsp onion powder
-1 tsp garlic powder
-1 tsp smoked paprika
-pinch of salt & pepper
For the sweet potatoes:
-2 medium sweet potatoes, peeled & diced
-drizzle olive oil
-pinch salt & pepper
-1 tsp onion powder
-2 tsp smoked paprika
We’ve got snacks covered for the week as well. Give this recipe a try for some midday protein to keep you full and focused at work.
Energy Snack Balls
Stir all ingredients together in a medium bowl until thoroughly mixed (add a tiny bit more peanut butter or honey if the mixture hasn’t achieved a sticky consistency).
Cover and leave to chill in the refrigerator for 30 minutes.
Once chilled, roll into 1-inch balls.
Store in an airtight container and keep refrigerated for up to 1 week.
-1 cup oats
-2/3 cups coconut flakes (optional)
-1/2 cup natural peanut butter
-1/2 cup ground flaxseed
-1/2 cup chocolate chips (optional)
-1/3 cup honey
-2 scoops protein powder
